The Teahouse Has New Owners

 

After 10 wonder-filled years as owner of The Teahouse, I, Dionne Christian, am saying Goodbye. I extend a gracious Thank You for your years of loyal patronage. I now say Hello and move forward to new & exciting ventures in my life.

The new owners of The Teahouse, effective November 6, 2012, are Rich Freedman and Jake and Sandra Mendel. They will continue The Teahouse tradition with pride and enthusiasm.

The uniqueness of The Teahouse has been lauded across the country, from the innovative menu to the teas from around the world, blended on the premises to offer new delights. This will continue with even more delights from the new owners.

It was most important to me as the previous owner that the new owners would bring caring and warmth to The Teahouse. Rich, Jake and Sandra are the ones and they are planning touch-ups and new fare to enhance your experience.

To that end, The Teahouse will be closed for one week, from November 6 through 12, so thtat the interior can be painted and the floors redone.

Stop by when The Teahouse re-opens to help celebrate the news owners and the future of this landmark Santa Fe restaurant! And plan to spend the holidays at The Teahouse as you have done in past years, continuing to make the season joyful with your patronage.

Revolution Bakery’s Gluten-Free Treats on The Teahouse Menu

Because increasing numbers of people have turned to a gluten-free diet for health reasons, The Teahouse is now offering a mostly gluten-free menu, with artisan bread, pastries, muffins, scones, cakes and more

Revolution Bakery opened last year and has received rave reviews for its delicious gluten-free products that often taste better than traditional versions. Customers have praised the bread, for instance, for its incredible taste and texture, and the muffins and scones are a big hit, too. Now, customers of The Teahouse can enjoy the same delicious gluten-free items, made with quality fresh ingredients in Santa Fe’s only 100 percent gluten-free restaurant.

Some of the popular items baked at Revolution Bakery include peach ginger walnut scones, blackberry thyme muffins, vegan sugar-free blueberry muffins, cherry glazed cupcakes, focaccia, pepperoni basil pizza, jalapeno cheddar muffins and egg muffins. There’s also an array of breads, including Vegan Quinoa, Multigrain, Mock Rye, Teff Sorghum and Vegan White Artisan.

The Teahouse opened nearly 10 years ago on Canyon Road, the heart of Santa Fe’s art center. With a garden patio, a friendly staff and more than 150 teas from around the globe, The Teahouse is a Santa Fe destination, a popular breakfast and lunch spot. The menu includes seasonal items as well as classics such as Teahouse Oatmeal, made with steel cut oats, buchwheat, cream, maple syrup and black sticky rice.

At Revolution Bakery, we take great care to offer you 100 percent gluten-free products made with as many organic ingredients as we can get. Our baked goods never contain any artificial ingredients, preservatives or chemicals.

Bakeries and grocery stores may offer bread, muffins, cookies, cakes, pies and other gluten free products, but these are often made with preservatives and artificial ingredients to preserve the shelf life and improve the texture.

One way to determine the purity of gluten free products is check the weight and the ingredients list.  Simply weigh one of the loaves we make at Revolution Bakery with a store-bought loaf, and you’ll see that our loaves are denser, made with only eggs, gluten-free flour and butter.

You also want to ensure that the products are prepared in a completely gluten-free environment so there’s no cross-contamination, which occurs when gluten-free foods are being made with the same equipment used to make foods containing gluten. The toaster is one of the most common sources of cross contamination, if used for both gluten-free breads and breads containing gluten.

Following a Gluten-Free Diet

Did you know that at least one out of every 133 Americans is allergic to gluten, a protein found in wheat, barley, rye and a multitude of food products that contain those grains? When so many of the foods that we eat every day contain gluten, it can be difficult to stick to a gluten-free diet.

If you’ve been diagnosed with celiac disease, an auto-immune disorder that can strike at any age and is caused by an intolerance to gluten, a gluten-free diet will prevent the bloating, cramping, constipation and other symptoms of this disease. It may seem like a difficult diet to follow, but we’ve got some great advice to help you with your gluten-free challenge.

You might be surprised to find out just how much of the food we eat is naturally gluten-free, from beans, nuts and seeds to eggs, fruits and vegetables, poultry, beef and seafood and most dairy products. You can even eat some grains, such as amaranth, buckwheat, cornmeal, millet, quinoa, rice, soy, sorghum and flax.

What you can’t eat is any kind of wheat, which can be challenging because wheat products have so many names and types, from enriched and self-rising to plain, bromated and phosphated. You want to avoid bulgur, farina, semolina, spelt, durum flour, kamut and graham flour.

And unless these products are labeled gluten-free, you should also avoid beer, breads, pasta, processed lunch meats, cereals, candy, cookies, crackers, sauces, gravy, French fries, salad dressings and croutons. You also want to steer clear of food additives and medication and vitamins that contain gluten as a binding agent.

You also have to take steps to avoid cross contamination of your gluten-free food, which can happen while the food is being manufactured if the same equipment is used to make foods containing gluten, or at home if you use the same utensils and cutting boards for gluten-free products as you do for foods containing gluten. One of the most common sources of cross contamination is the toaster, if you use it for both gluten-free breads and breads containing gluten.

Because grains are often enriched with vitamins, one of the downsides of a gluten-free diet is that you may not get enough vitamins and nutrients, You may want to take daily vitamins to ensure you’re getting sufficient amounts of iron, folate, niacin, fiber, calcium, riboflavin and thiamin.

Another downside to gluten-free diets is that some gluten-free products on the market can be unhealthy because they contain extra sugar and fat in order to simulate the texture and fullness provided by gluten. Be sure to look at the labels to see just how much sugar and fat are in the products before you buy them.

We use a variety of gluten-free flours in our baking, from almond and amaranth to cashew, chestnut, chia, chick pea, coconut, black bean, brown rice, masa harina, hazelnut, pistachio, tapioca and quinoa. We also use only the freshest ingredients, and we incorporate organic and locally sourced ingredients as much as possible.

The Teahouse has just opened a sister eatery, Revolution Bakery, offering artisan gluten-free  baked goods in small batches, made from scratch by hand in Santa Fe. We use the finest ingredients to create the best baked goods in town, from gluten-free and traditional loaves of bread to muffins, scones, coffee cakes, layer cakes, bundt cakes, cupcakes, cookies, brownies and more.

All of our sweets are handmade, hand rolled and hand cut in Santa Fe, New Mexico, using only the freshest ingredients with no added preservatives or artificial flavorings. Our menu also includes breadsticks, brioche, baguettes, buttery rolls, focaccia, pizza crusts, bundt cakes, cupcakes and more.

Revolution Bakery is located at 1291 San Felipe Ave. in the Railyard District, a budding neighborhood full of shops, galleries and restaurants. We are open from 8 a.m. to 6 p.m. Monday thru Friday, and 8 a.m. to 4 p.m. on Saturday.

Our baker is at the helm of the kitchen in Revolution Bakery, producing decadently delicious biscotti, chocolate-dipped macaroons and assorted cookies — including ginger snaps, chocolate chip, mint lavender and spicy Mexican wedding cookies.

Revolution Bakery also offers a line of fragrant scones, made with ginger, blueberries, chocolate or pumpkin. Our cakes are delicious, including coconut, red velvet and dark, rich flourless chocolate cake made with Belgian Côte d’Or dark chocolate. Our bundt cakes come in a variety of flavors, including lemon, butter, coffee, maple and chai.

We create amazing sour cream coffee cake, crystallized ginger muffins, tarts, cinnamon rolls and brownies, including double chocolate, peanut butter swirl and So Blonde. Our English toffee is made with pecans or almonds.

The bakery is still in its opening phase, but soon we will offer fresh-baked artisan loaves of gluten-free breads. We can create vegan and dairy-free baked goods by request and we also sell wholesale items.

You can take our baked goods home or enjoy them fresh from the oven in the bakery’s inviting and relaxing dining space with a cup of delicious Metropolis Coffee, a Chicago-based artisan roaster.

Of course, all our baked goods will be available at The Teahouse as well as Revolution Bakery. We’re a perfect source for all your holiday needs, from  breads and pies to cookies, cakes and other sweet treats.
